Is there a way to style the subtitle. I would like to change the subtitle to font-weight: 500

Of course. Select the Headline Block that contains your post meta, and change the weight in its Typography settings – see here:

Sounds easy, but…

I can not reach the subtitle by Customizer > Headings

And because it is the shoppage, there is no block that i can tweak.

And Customizer > Typo > WooCommerce affects de Titel and the subtitle. I only want to change the subtitle.

Edit the Block Element, select the Headline Block where you add added the Post Meta: subtitle.
With that block selected you will see it has Typography settings in the right sidebar
