I have tried disabling all except GP, the issue still persists.
I have now uninstalled GP Premium, however the issue still persists.
The theme we are using is GeneratePress, when I swap to another theme, the issue doesn't exist anymore, so do I somehow reinstall the GeneratePress theme?
Even when I try resetting customised settings it doesn't fix the issue.
It seems this is an issue exclusive to the generatepress theme, so not even GP Premium.
Any ideas?

The purpose of reinstalling was to see if the current copy of GeneratePress installed on your site is corrupted.
Installing a fresh copy overwrites the old one, which can potentially fix any files that may have been corrupted.

Yes, I have installed a fresh version of GP premium, but I can't see a way to download GeneratePress

Go to Appearance > Themes and activate another theme.
Once you've activated another theme, go back to the theme list view and click on GeneratePress.
You should see a delete link on the lower right corner as shown here - https://share.getcloudapp.com/p9ukZG6Y

Googling "How to delete generatepress theme" gave no results - the issue is now fixed, our footer has gone missing but we'll figure that out.

I had a hunch it was a corrupted installation when you said "Unfortunately the wordpress back-end is not working for me now, it’s just loading a blank screen.".
Sounded like an instance of server instability and it may have affected the integrity of some files.
