This helped me as well – I thought I had all the GP modules enabled but when I checked I found the Copyright module disabled. Once I enabled it the Copyright editor box appeared in the customizer menu under Layout->Footer
I thought I was going to have to edit footer.php directly until I found this thread.

I activated premium and unfortunately that copyright line doesn’t exist within my customize options.

I am not sure if I like this two-step process to remove a link when one has paid for premium. I had to google to get here.
