How do I create a header for different categories/pages and assign a sidebar with different widgets on each

what changes to the Header do you want to make ?
To have different sidebar widgets you will need a plugin like this:
I may have said it incorrectly. I mean something like what is at the top of the site library’s vinyasa theme.
