Having a difficult time trying to figure a way to have the featured image show below the title and an excerpt (which is my snippet info).

By default, you should be able to move the Featured image through Appearance > Customize > Layout > Blog > Featured Images > Posts: https://docs.generatepress.com/article/adjusting-the-featured-images/
If you’re using a Block Element – Page Hero, you can alter it’s position theoretically anyway you want. Here’s the full article for reference: https://docs.generatepress.com/article/block-element-page-hero/
If you have lots of posts and pages, you can simply set the display rule of the Block Element to all posts and pages.
