woocommerce catalog - set display to start at the default category?

hi there,
i have a site that i'm moving to generatepress that uses nested product categories for products in woocommerce. at the top level is basically an all-products category with the category tree below it. at that top level, there is alos a category for special order items, services etc that is not for the public. i'd like the /shop catalog page to use the all-products category as the starting point. i found that woocommerce let's you set a 'default category' and was hoping it extended to display, but i think it's only for when products are added that they get assigned that category instead of the uncategorized one, if not categorized.
i searched the forums, but can't find anything. surely we're not the only ones who've done this...

I don't fully understand the requirements here but it doesn't sound like something a theme (any themes) would handle.
Have you tried checking with WooCommerce' support team to see if they can point you in the right direction?
If they can provide a solution that works with a default WP twenty series theme, the same solution should work in GP.
