I’d like to hide or remove the cart icon from the nav menu. Seems like their are ways to do it I’ve found online, but the methods are specific to their theme. Does generate press have a method to hide the cart icon?

You’d need to bug Elementor’s support some more. If you escalate the issue enough then they might give you a better support person.
