WebP images not showing in Generatepress when using WP Show Posts PRO

are you using a plugin to generate the webP images ? If so chances are it may not be able to filter the images loaded via another plugin.

Can you point us to a page with WPSP that's using WEBp images?

The homepage's WPSP lists use jpg and it's displaying properly.

Well, this is the thing: all the featured images are in jpeg because the webp images do not show up.
On the other hand wp show posts pro do not list private posts as well!

Are you using the image width/height options in the WPSP list settings? If so, that's likely the issue, as that triggers a (soon to be deprecated) on-the-fly image resizer that builds a new image.

Yes, it's quite stable - no known issues.

It basically deprecates the image width/height options that use on-the-fly resizing and allows you to set an image size defined by WordPress.
