I have used additional CSS for temporary as customisation wasn’t working.please restore the Default customisation & delete the additional CSS if needed.

You have a cache plugin installed. If you try disabling the cache plugin, remove your custom CSS and them update your Customizer settings. Then view the site in an incognito/private browser.

You may find you simply need to clear the Caches to see an update made in the Customizer.

I am using wp-rocket. Does it conflict with generatepress theme? Can't we work on generatepress theme without disabling wp-rocket?

I wouldn't call it "conflict", it's just what cache plugins do and it's a common issue using cache plugin.

Let us know if things work after purging the cache.
