Themes > Customise results in critical error (server response 500)

Hi,
I have just installed Generatepress. Going to Themes > Customise causes a
"There has been a critical error on your website. Please check your site admin email inbox for instructions.
Learn more about debugging in WordPress." error. In console, this shows as a server 500 response.
This happens with just the theme activated and all plugins deactivated.
PHP memory limits are 256M (As shown in Tools > Site Health > Info). Should it be more than that? Or is it possible this figure is inaccurate? I've test installed it on a domain with less memory than that and it works fine.
WP Debug is enabled and no errors appear in the dashboard.
Activating the core WP theme (TwentySeventeen) does not have the issue and Themes > Customise works.
Nothing in the error logs point to being related to this issue.
What could it be?

256M should be adequate.
We provide some minimum defaults here:

Personally my standard installs are 768M for consideration of plugins and overall better performance.
What version of WordPress are you running ?
You can tell by hovering over the WP logo in the dashboard and clicking about.
