Theme migration

Hello
I have a site that does well but it’s using a very old theme with poor performance etc …
So my dilemma is - I want to change theme to GP but hold onto the page templates so I can keep the tags / markups etc as seen on my existing site.
In summary, I want to replicate my existing site on the GP theme to limit any SEO dramas and allow me to make tweaks and changes incrementally plus benefit from the GP tools / features.
Is this possible?

that really depends on what the 'page templates' are - if they're are a WP Page Template that the old Theme registers then those would may to be reconstructed.
If you can share a link to an existing page where they're being used on the old theme, i can take a look to see what obvious differences there are.

It would be possible to re-build something like that in GP - but its not going to have the 'exact' same semantic markup ... similar but not exact.
One thing - is the Review element on the single post a Plugin ?
