Are there any good starting points/tips/guides to creating my own GP themes?

New to GP. I suppose I'm in the WP theme/child-theme frame of mind. I guess I just tweak away and then use export if I ever want to reuse a particular "theme" I've created. Correct?
Yup that should work.
The import/export will save all the customizer options for you.
If you want to re-use the content/layout as well, a plugin like this might help:
