Taking out/Changing displayed "categories" using GP shop template (soap theme)

if you go to the Products -> All products and delete any Products that were imported.
Then go to Products -> Categories and delete those Categories you do not require.

If you have lots if Products on your shop then Categories are great.
If you only have a few products eg. 10 or so then you probably won't need them.

Their purpose is similar to the labels you find on the shelves in your supermarket, like the Region a wine is from. It makes it easier for users to find the products they are looking for.

The good news is, you don't have to add them today.
If at any time you create a Category e.g. Red wine and you add that category to your products, then Woocommerce will automatically create a Category archive where you will see just products in that category.

Thanks a lot for this explanation, it makes a lot of sense. Now I've realised that I might have made a mistake by not deleting the products in the template but just editing them (with my own pics and names). Do I need to delete it all in order for the categories to disappear?
Or, in other words, when I go to "All products", I can only see the 3 that I have changed so far, there are no other visible products.

There shouldn't be an issue you reusing the products.
If you edit each Product, and in the Sidebar > Product Categories. you can see what categories are set against that product.
But if your go to Dashboard -> Products -> Categories you can simply select and delete them. They will automatically be removed from any products they were assigned to.
