Is it normal for them to come in in one massive paragraph tag? Is there any way to style it?

Yea that’s normal – excerpts strip all HTML and only display the first little bit of the content.
If you’d like more control over your excerpt, using the more tag might work: https://generatepress.com/knowledgebase/using-the-more-tag/
