Your image is quite small, so it won't look great on higher resolution monitors.

You can use the retina logo option to upload a version that's twice as big, and it will look much better.

You can also try GP 2.2 (currently in testing), which has a logo width option. This allows you to upload a larger image (twice as big) and size it down to what it is now: https://generatepress.com/generatepress-2-2/

Why on mobile the logo can not be seen?

I see it, but it's pretty small. Might be better to upload an icon-type logo (like the coffee bean) for mobile only.

Or you can increase the height of the mobile header.
