I suspect I know the answer, but thought I'd check in case there is a workaround.
Is it possible to use GP + WP Show Posts to be compatible with AMP Standard Mode?
I am using the GP for AMP Plugin from Github already.
Alternatively, any suggestions for AMP friendly Plugins that allows for the level of customization (specifically in terms of what meta to display and pulling from tags rather than categories)?

The shortcode causes some validation errors with AMP in standard mode, but I found the newsblocks plugin as an alternative option. It is still in beta, but it's been stable-enough in a local environment so far at least.
I'm going to mark this as resolved in case it is useful to somebody else in the meantime.
