RSS feed filter question

Hello, I'm sorry to ask here but I've spent the last day trying to figure this one out and I cannot get my head around it. Thanks to some very helpful topics and snippets from here previously, I've managed to achieve most of what I need to do.
But, I am getting stuck on encoding the output of the featured image in the RSS. I used the snippet mentioned here and adjusted it slightly, but I think I Frakencoded it a little bit too far. There are several Frakenmeshed snippets I've attached [for the sake of any future person reading this and becoming confused].
PS: Just want to add that while I know there are some very cool and useful Plugins out there, I've had a few issues with those too and there are a few minor differences in feed requirements for some syndication networks. I'm trying to firstly, obviously solve my problem, but also hopefully put together a few templates for other users who might be stuck in the same place considering it's a question I've seen come up here and other forums quite often :-)

Unfortunately the theme itself doesn't control the RSS feed at all and it's handled by WordPress.
I think the plugin solution is the best method here.
If not can you start a topic in a general WordPress forum like this?
