I need some guidance. When navigation search is enabled, does the search include Alt-image terms and other keys words set in Yoast? I assumed it just searched words in each page or post. Maybe I don't understand. Thanks!

WordPress itself doesn't search custom fields by default.
To do so, you'd need to use a plugin like this: https://wordpress.org/plugins/relevanssi/
There are lots of others as well if you search for "WordPress search custom fields".
