Query about deeper implications of using a Site Library design

I am building a new web site and have in the past used the Site Library for a design on a different website. I seem to recall that using a Site Library design was somewhat 'limiting' for alterations down the track. Now that Gutenberg is in full swing, and that Full Site Editing does not seem far off, my decision about what design approach to take is more complex. I am also planning to use GenerateBlocks and considering the Pro version.
My question please: Is it better to avoid using the Site Library designs and simply build things from scratch, using the basic GP tools, allied with GB and GB Pro tools please? That's what I suspect, but I'm not sure.
My aim is to keep things as simple as possible because despite having run websites for over 20 years (and WP for at least 13 years) I am ignorant and unskilled in many things website wise, preferring instead to concentrate on the content and my clients. I want to avoid 'building in' technical headaches for the future.

If you already have your design in mind, I would recommend to use GB build from scratch.
You could basically avoid writing CSS with GB pro.
Meanwhile GPP 2.0 offers dynamic content feature which will be very helpful to build unique single post/ blog layout.
