Projects Custom Post Type

I've create a custom post type call "Projects" using Toolset. I plan to use this just for portfolio examples. I'm aware that all post types when clicked go to the normal blog page.
Is there a way to control this so that:
Blog post go to Blog page (default)
Projects go to a new page with custom side menu (not the blog page).

I realise this isn't a built in feature of any theme but if someone can recommend anything I'd be grateful.

Hi Scott,

I would recommend checking out Tom's WP Show Posts plugin. It is basically made for requests like yours.
