Problems with controlling the background alignment

I have recorded a screencast here.
I have fiddled with the appearance controls for hours and just cannot get a nice clean looking published site. It looks perfect when in the Dashboard but not when published.
Is it possible to achieve what I describe in the screencast? If so, then how to achieve that?
I have made some progress since posting this so there is no need to respond unless you can explain how these settings work (I think I got there by accident).
