I want black pages with white text. I want my header image back. I hate the color crayon selections altogether.

Thanks for opening a support topic.
The blue color in your site is coming from the Colors > Primary Navigation and the green is coming from Colors > Body.
A site logo/header image can be uploaded in the customizer as well:
