I am using the latest version of Generatepress and Elemetor Pro.
However, I am not seeing my navigation show up at all. I have it active on my page, have it set to merge with header.
No navigation is showing up at all and I'm beyond confused as to what may be causing this issue.
Any help would be greatly appreciate!

Can you first check to see if the navigation location is not set to No navigation?

I have checked all these item's and everything is in place. Navigation is set to designated menu, nothing disabled on page.

You likely have the Page Header / Featured Image disabled in the Disable Elements add-on: https://docs.generatepress.com/article/disable-elements-overview/
