i want to build, in the same website, two different blogs on related fields (e.g. 1.A. Italian literature & 1.B. German literature) and a third one on a different, unrelated field (e.g.2. poetry). I suspect that the topic has already been somehow addressed, by I didn’t understand. So be very simple, if possible, please.

why not use a Parent Category to separate each of your Posts ? Eg. Italian Literature category.
Then you can add the Category to your Primary Navigation.

it took me some time some time to find Primary Navigation but I then what should I do?
in addition, in the Archives the two blogs are mixed together; there seems to be somewhere some “blog content layout options” which, might contain the solution if I understood, but where can I find them. I’m very frustrated

So DO NOT display the Blog Page in your Navigation.
Instead you would go to Appearance > Menus and select from the Categories list in the menu builder. Simply select each category you want displayed.
