I'm how you would like the submenus to show. Can you share a reference site or sketch of how it should look like? Submenus on mobile usually dropdown.

Perhaps you can try enabling the Off-Canvas menu on mobile through Appearance > Customize > Layout > Off Canvas Panel, and see if that works for you. Reference: https://docs.generatepress.com/article/off-canvas-panel-overview/

With regards to the content moving to the right as the Off Canvas Menu opening, you would likely need Javascript to accomplish this with the structure present in GeneratePress. Unfortunately, this level of customization is out of our scope of support.
