I would like to have a left sidebar similar to the one on this website which will have multiple topics and should keep changing based on the selection in the left side

Can you try creating a new menu for all the items:

And add that menu in the sidebar widget using a custom menu widget?
I don't want to have the same menu across the website.
is there a way I could have them in specific pages alone?

thats looks like a Sub Page menu.

Unfortunately I'm not 100% sure from looking at the code but looks like it's just coming from JS Composer.
