Input text color on all forms is nearly transparent

Good morning!
I finally took my site off of maintenance mode last night (hooray!)

However I noticed a very mysterious thing while testing a Convert Kit form last night: the input text color on my site's forms is transparent and super hard to see.

(CK form at the bottom and the comment box both have the same issues)

I thought maybe it was the CK plugin, but then I noticed that most of my site's forms input with a transparent text.
Areas I've checked so far include Convert Kit, my Gravity contact form, the WP comment form on blog posts...and even the input box for adding a link within a blog post.

I'm wondering if you've come across this oddity before and if there's an obvious culprit? Or did I forget to do something in the customizer when setting up my theme?

I'll start deactivating plug-ins and poking around more to see if I can identify where this is originating from.
