I just wanna ask why if I change the color of the main MENU to dark blue: #10253A
- on my website nothing happend: it's still white

Hi there,
you have a Header Element that is is using the Merged Side Header option which has its own colors settings for the navigation:
https://docs.generatepress.com/article/header-element-overview/#site-header
Those colors will override the Customizer for wherever the Header Element is set to display.
