How to dinamically populate a menu

Basically I want to replicate the menu behaviour seen on http://www.vogue.com/
I know this would be require to many things, so I'll be asking one thing right now.
Right now I have a main menu with categories, I want the subcategories to display in a secondary menu based on the current category archive. There is a way to do this dinamically? So I don't have to create every single sub menu.
