How do I disable the GP theme from automatically updating?

Every time there is an update to the GP Theme, it wipes out all of my WooCommerce email templates and other custom files. How do I turn off the automatic update? I thought I had turned off the automatic theme updates in my Wordpress settings, but this morning's update still wiped out my templates. Is it as simple as disabling the actual plugin automatic updates?
Hi there,
if you select the Theme in Appearance > Themes, theres an option to Enable/Disable Auto Updates.
Ideally you should move your custom templates to a Child theme.

Thanks for the response, I found the option you mentioned. Can you point me to the Child Theme docs please? The last time I looked the instructions were too complicated to follow for the amount of time I had to get my site working again.
