I would like to change the default icon at the top of the theme with my own logo on mobile, but I can find where I do this.
The one I want to replace is
https://gpsites.co/agency/wp-content/uploads/sites/60/agency-icon.svgI assume there is an easy way to do this?

Try changing the mobile header logo in the customizer:

You can control the mobile header logo size at Customizing > Layout > Primary Navigation > Menu Item Height (click on the mobile icon).
