I'm looking to add custom sidebars on a new WP install using Elementor. Do the instructions in this thread still apply today or is this the best way to accomplish what I'm trying to do? Thanks in advance!

it is still a very valid and good way of adding sidebar areas.
If you just want to have dynamic content displayed in an existing sidebar, then there are plugins like Content Aware Sidebars that do a very good job.
