Header responsive problems

Hi guys,
I have a background header image set, and have used the header padding to move the site title etc to where I want it, however it doesn't work very well as far as being responsive goes. You can see it at http://gp.workingsheepdogtraining.com/blog/. It looks how I want it on full screen on desktop, but when I shrink the screen size it has problems. Is there a better way to do this?
Here is what I would like it to look like: http://temp.workingsheepdogtraining.com/ when responsive to smaller screen sizes.

To achieve something similar to this site http://temp.workingsheepdogtraining.com/, I would recommend trying out the page header add-on: https://docs.generatepress.com/article/page-header-overview/
It gives you a full screen option: https://docs.generatepress.com/article/page-header-content/#fullscreen
Thanks Leo. I have tried that, but strange things seem to happen. When I use the page header, the page content ovelaps the menu, and the sidebar has moved below page etc. And text content doesn't really resize responsively - it ends up a single column of letters when sized to mobile size. Not sure what I am doing wrong!?
Don't worry Leo, I'll keep playing around with it.
