Header padding on mobile

This question is been asked in hundred variations here already and it seems what I want does not work without adding css.

Where / how can i set different values for mobile header.
Or should I use a different method for setting the page header paddings, which makes it possible to manage the paddings in one place for both mobile + desktop?

One additional question: on mobile it renders the word "menu" next to my burger navigation, how can i avoid that?
