So I created an element as which should work as a header using the feature image. And it does on all pages except Blog page, I didn’t add an exception in the element and it is shown until I do not add in reading setting that my POST PAGE should be a blog. As soon as I add it, it just goes to totally weird style

Once you add your Blog page to Post page, it means your blog page changed from a static page to an index page.
Index page doesn’t have a featured image or title, so your header element won’t work for it.
You’ll need to create another header element for Blog page, use custom image instead of feature image.
Display rule would be Blog.
