Google Fonts & Custom Fonts

I'm building a site for a client that uses a mix of Google Fonts and a Custom Font.
Using one of the themes from the site library in GP Premium.
Also using Elementor as the Page Builder.
The problem I am having is I am not seeing the Google Font I want in the customiser "Sans Mono" this is a Google font and in other themes like Kadence, this font does show up.
Does GP only have a limited amount of Google fonts available?
Last question how does Elementor inherit styles and fonts from GP?

You can disable the global fonts in Elementors settings then they will inherit the themes.
Will I be able to add Sans Pro to the list?

Yes you can add any Google Fonts to the list using the method David linked.
