Google Analytics Numbers Dropped

I've changed the theme to GP premium 3 days ago and since then the numbers I see in Google Analytics have dropped significantly. When I look at other platforms such as Google Search Console and my ad network's dashboard it seems that indeed there is a problem with the GA implementation and only part of the visitors and visits are being recorded.
I've checked the implementation and everything seems okay.

Changing something major like a theme can cause temporary ranking changes as Google re-crawls your site. Did your last theme have any SEO-related options you were using that are now gone due to the theme change? If so, you may want to install an SEO plugin and set similar settings to your last setup.
It may also just take a couple of days for Google to understand the change and bring things back to normal.
If it was me, I would:
1. Make sure my tag was installed correctly
2. Make sure my meta tags hadn't changed from switching themes (this is why we don't add meta data options, it should be up to a plugin).
3. Make sure my site was performing as best as possible: https://pagespeed.web.dev/
