getting started overview

Hi,
Is there a guide/document ot help me get started.
I'm struggling to find and piece together all the parts: GeneratePress theme, GP Premium plugin, GenerateBlocks, GenerateBlocks Pro, Elements etc.
I want as lightweight as possible but I don't understand what each plugin/thing adds and whether it's necessary. Ideally I'd like to not spend time research something to just relaise I don;t need it.
Is there any overview out there?

Brilliant thanks for the help, I'll take a look at those links.
I'm redoing my site: barrylangton.co.uk so basically just need to find the best approach in terms of speed (trying not to install plugins, page builders I don't really need)
