As you can see on this page, the heading in the hero, second line I'm trying to get to look this this:

But I can't get the spacing to reduce between each word and the seperate in between. I've attached the blocks I've use so far in my attempt to do it.

Any specific reason that you are using Grid for this?
Can't these 3 parts be in one Headline block?

I just wanted to make the separator between them a different colour.
But if it is too much work I'll just put it in one heading block.
You can put theme into one Headline block (GB's), and select the separator, then you'll be able to give it a different color:
