Format and reorder, post date, author and category and add in gravatar

I would like to change the way the info shows at the top of each individual post.

Currently below the H1 title I have the following:

Updated:25/08/2021 by Saranne Day

And at the bottom of the post I have the category listed.

I would like to change this to:

[Gravatar Image] by Saranne Day | Updated: 25/08/2021 | Category

And have this shown below the H1 title.

How might I be able to achieve this? Thanks!
