Hi,
What is the best way, choosing a font for the header content?

Hi Christophe,
The settings you are looking for should be in Customizer > Typography > Content.
Let me know if you need modification in addition to H1 H2 and H3.

I do it a more 'comfortable' way.
I disable the image header option and install Elementor Builder.
