Fonts are all being overridden

The weirdest thing is happening. I have my fonts set to Open Sans for headers and menu nav items.
I have them set to that in GP Customizer > Typography
And in Max Mega Menu.
All has been fine.
When you inspect in a browser, that's what it says the fonts are. But when you look at the site from the front end, the fonts are not the same.
About two hours later, all of the sudden, all fonts are being overridden to something like Times.
I installed Gravity Forms today and Gravity Forms Styler and Layouts, tweaked one form, it looked fine. There aren't even any font settings IN Gravity Form Styler and Layouts, nor in Gravity Forms. So I can't see how that did it. But sure enough, all fonts are now Times.
Even in Seed Prod Coming Soon the fonts are all wrong in the menu items. Something changed a default font setting somewhere but I can't imagine what.
Any ideas? I've never seen anything like this happen!
I installed it and it made no difference :-( Cleared all the caches etc.
Any ideas? Like it's just not seeing the right fonts in most places but yes in some.
Cloudways support said to try installing Really Simple SSL but that didn't fix it either.
He is trying to manually update URLs but I don't understand why this hasn't been an issue on any of my many websites until now.
Any ideas?

Wow, I think it's fixed. I deleted a plugin, Admin Editor Pro, which hadn't been giving me any trouble on multiple sites but I ended up using something else and suddenly the font issue is gone. Does that make sense??
I don't have any experience of that plugin. Theres a chance that it spat out some bad code that got cached at some point.

It's odd, I was testing in incognito mode and it happened again so maybe it isn't fixed. Then after several refreshes it's fine again. Is there anything you can think of that would make fonts not respect chosen fonts?
Sadly that wasn't the issue. It's back again. It might be a Reddis caching issue but Cloudways can't figure it out and just tell me to revert to an earlier working version. I'd lose a ton of work. There has to be a way to figure why all of my fonts are being hijacked by something else. Any ideas?
I would need to see the issue on the site in order to check out what's happening. Right now I'm only seeing a coming soon page.
Any chance you can supply temp login details so we can see the site?
It's back to working again. I think they did something on the Redis/cache clearing/reinstalling path. Weird. Once again it's all good now.
