I am testing the features on a spare domain that I have. I noticed that I am getting an extra section on the top which I am unable to remove.

Hi there,

You can use the Disable element module to disable the Content Title:

You can also create a Layout Element to disable all of them at once using the Display Rules:

The majority of sites in our Site Library are built with GenerateBlocks. Apart from those with the Elementor or Beaver Builder logos and few other exceptions like Dispatch.

So in the majority yes you can edit the sites withe GenerateBlocks.
