If thats for products then you can enable the short description and add to cart button in Customizer > Layout > Woocommerce.

However, I would like to change the hyperlink on the (Read more button), because I'd like to redirect to another specific webpage when someone press the "read more" button

Sounds like it would be simpler to create static content.

With it you can create grids, to which you can add an Image block, text block and button block.

For Amazon Affiliate links you can use the External Product option in Woocommerce:

To display posts on Static pages you can use WP Show Posts. But it will require some custom work to redirect the URL - you will need to ask for support at the WP Show Posts plugin.
