customiser tablet view shows desktop view

Hi there,

The tablet view shares style with a desktop view because some desktops have viewport size similar to tablets. Some tablets even have a larger viewport than some desktops.

That's why desktop settings on customizer apply on tablets. :D

Is there any way to manage it correctly in Customizer while working with GP?

That is actually a WP core feature so unfortunately not.

As Elvin pointed out, tablet views are very difficult to deal with.

Unfortunately not.

As mentioned, that is a feature from WordPress core. Unfortunately they don't offer better control as far as I understand.
