Custom Post Type Page Template with Premium

I'm currently using GP Premium and I'm designing some custom post types that I want to display on a page in a specific way, where custom posts tagged with a category will display under that category header. I have an example below this message.
I'm guessing I have to create a page template for this, but I only know how to do that with a child theme.
And I can't use a child theme, because in order to use GP Premium, I must have the GeneratePress theme activated (I'm getting the message on my dashboard that I can only have the main GeneratePress theme activated if I am to use GP Premium).
What would be the best way to go about customizing the display of custom posts with a page template with GP Premium?

You can absolutely use a child theme with GP premium.
Not sure how you created a child theme before but if you get a blank one from here it shouldn't give you that message:
