Hi,
I'd to be able to select css the way it is shown in your video about dynamic typography, at 4:00 (https://docs.generatepress.com/article/dynamic-typography-overview/). How the heck does he do that?

Hi there,
you can add any CSS selector you like by selecting the Custom Target Element.
But you need to know the relevant selector, which you can get using the Browser Developers tools to inspect the element.
Let us know if there are some specific elements you need help with.
I need help with captions.
For a normal image caption the try this:
.wp-block-image figcaption
