Container and grid not available in blocks selection

Grid and Container are not GP features, they are blocks from GenerateBlocks.

You'll need to install this plugin:
https://wordpress.org/plugins/generateblocks/

Question, what is the difference between Generate Premium plug in and the Generate Blocks plug-in and the Theme? I'm assuming I need all 3 to work together.

I apologize in advance for my lack of knowledge. I'm just starting to learn how to use these.

no apologies necessary - all questions are important :)

The Theme is a must have requirement of WordPress. ie. you can't have a WP site without a themes.
The GP Free theme provides you the basic styling controls for your site eg. Colors and Typography. As well as some options to set which theme parts are displayed eg. Header, Navigation, Sidebars, Footer etc.

GeneratePress Premium is a plugin that extends the features of the free theme, providing more color and typography controls, additional theme parts such as Secondary Navigation, Mobile headers and options to display them, and more granular controls such as setting your blog layout and choosing what post meta ( dates, author name etc ) is displayed.

In addition GP Premium adds the Elements module which allows you even more granular control to change Layouts ( Layout Element ) or to inject code ( Hook Element ) or insert dynamic or static content into your site ( Block Element ).

So those two parts are what control the global settings and styles of your site.

GenerateBlocks plugin simply adds 4 x Block to the WordPress Editor.
You use these blocks to design and build various layouts within your pages and posts content.
The GenarateBlocks plugin can also be used in the GPP Block Element for creating dynamic content.
