Change "Inventory" settings

I'm using the "Niche" Theme and I will never have a product "Back Ordered" I want to change that choice option to read "Customer Order". How do I do that?

Where are you seeing this text?
This might be a question you have to check with WooCommerce support to see if they have a filter for this.
GP doesn't alter the functionalities of WooCommerce at all.
Let me know :)
When I add a new product on the 'All Products" page I select "Inventory". Then I have two entry blacks one SKU and the other Stock Status..
Yeah you will need to check with WooCommerce support unfortunately.
GP itself cannot control the options/functionalities from WooCommerce.
