Hello,
I purchased GP Premium today and would like to use it to change the site header text color. I cannot find any instructions concerning how to use any of the plugin features. I have activated all of the features but cannot see how to use any of them. What have I not done?

All the features are in the Customizer.

For site header text color, it would be in Customizer > Colors > Header > Text
